Celebrated as a royal centerpiece dish, Qabuli Palau represents the pinnacle of aromatic rice craftsmanship, famous for its rich fragrance and layered flavours.
We use aged extra-long grain sella basmati rice, soaked and simmered in a spiced bone broth infused with black cardamom, green cardamom, cinnamon, and cumin. The rice is then layered with tender slow-braised veal shank or lamb, topped with hand-julienned caramelized sweet carrots and plump sweet black raisins, and steamed under gentle heat (Dam) until every single grain remains separate, fragrant, and golden.
